Our Panama Story
Just an hour’s drive from the vibrant heart of Panama City, nestled amid the lush pastures along the Bayano River, Jalisa Honey sprung to life in the late months of 2023 thanks to the support of Coquira Soil Project and the generosity of Thomas & Adrianna Patton.
The apiary boasts a network of over 20 thriving hives, continually expanding as it embraces a growing influx of swarms from the resilient and prolific Apis Mellifera Scutellata.
These Africanized hybrids, renowned for their remarkable honey production, robust resistance to diseases, and fierce aggressiveness, are a testament to nature's tenacity and productivity

Starting our Honey House
With the hives carefully installed, the next step is the exciting process of assembling the necessary equipment.

Once the golden treasure is revealed, the frame is placed into a centrifuge, where spinning forces free the honey, coaxing it to flow and collect: a sweet reward for patience and care.

From decapping tanks and centrifuges to decanters, frames, smokers, and bee-suits, every item found its place, arriving piece by piece, some sourced locally, while others traveled across borders, imported from the USA to complete the ensemble.

At Jalisa Honey, we take pride in producing honey where each drop is harvested with care, ensuring it remains raw, and unaltered — just as nature intended.
